pumpkin cake


I made this amazing pumpkin cake for our small group this week. It is so easy, simple, and super yummy! I think the reason I love it so much is because I only had to dirty one mixing bowl! Of course, I always recommend breaking your eggs in a seperate bowl. Thanks mom for teaching me the right way!! Enjoy. :)

Cake:
2 cups sugar
4 eggs
1.5 cups vegetable oil
1 teaspoon salt
2 teaspoons baking soda
3 teaspoons cinnamon
1.5 cups pumpkin
2 cups flour

Beat together. Pour into a greased and floured cake pan. Bake at 350 degrees for about 45min. Cook time depends on the type of pan you use. It looks so beautiful in stacked circle pans, but I used a bundt because I'm lazy.

Icing:
1 cup soft butter
8oz cream cheese
1 box powdered sugar
1 teaspoon vanilla

Wait until cake is completely cool to ice.
